Put the apples in a saucepan with the sugar and cook, covered, adding a splash of water as necessary, until completely soft. Transfer to a blender and purée, or push through a sieve.
Combine the whipping cream and mascarpone in a bowl and whip until firm but not solid.
In 4 serving glasses, arrange a layer of crumbled cookies and drizzle with Calvados. Add a layer of apple purée
