It’s easier than ever to find soft and tender dried fruit, the intense flavor and texture of many of the varieties available go well with cooked bananas, but if you can’t find any dried mangoes, then dates, prunes, or apricots are all good substitutes.

Ingredients

  • cup (150 mL) granulated sugar
  • ¼ cup (50

Method

Whipped cream or sorbet, to serve.

Caramelize the sugar with a splash of water in a flameproof metal tarte Tatin pan, or a suitable-sized skillet capable of being placed in a hot oven. Add the butter and let it melt in slowly, stirring gently to distribute evenly. Remove from the heat.
