This cake is something of a British institution-soft and sweet, it seems to be infused with delicious “golden syrup.” Serve with a good-quality tea, on Sunday at about 5 o’clock, sliced, lightly toasted under the broiler, and spread with this butter-it will literally melt in your mouth.
Mix the softened butter with the sugar and lemon grated rind.
Add the syrup, leaving golden streaks in the butter.
To serve, spread on slices of cake, cold or lightly toasted under a broiler-don’t use the toaster!
