  • cup (150 mL) sugar
  • 2 Tbsp (30 mL

Method

Make a caramel with the sugar and water. Leave to cool slightly before pouring into the bottom of 6 small ovenproof pots or ramekins.

Put the cream, milk, and vanilla bean with its seeds in a saucepan and bring slowly just to a boil.

Remove the vanilla bean.

Meanwhile beat the egg yolks and sugar together in a large mixing bowl unt
