  • white cauliflower
  • green cauliflower (Romanesco, if in season)
  • purple caul

Method

Steam the 3 types of cauliflower separately-in a steamer-so that they remain slightly crunchy.

Leave to cool.

Caramelize the almonds in a skillet with the sugar—no need to add butter. Mix with the golden raisins and keep to one side.

When the cauliflowers are completely cool, cut into small pieces, keeping the florets whole, and mix all three colors with the almonds and
