For the ratatouille

  • 1 eggplant, rinsed, and cut in strips
  • 2 zucchini, rinsed, and cut in strips
  • 1 yellow bell pepper

Method

Preheat the oven to 350°F (180°C).

Put all the vegetables into a baking dish.

Mix the oil and honey, and season with a little salt and pepper. Pour over the vegetables and mix with your hands until that they are well covered.
