Manchego is a spanish cheese made from ewe’s milk. It’s cream-colored, fatty, and firm to the touch. Find it in specialty cheese stores.

Ingredients

  • 3 Tbsp (45 mL) chopped walnuts
  • ½ cup less 1

Method

Place the chopped walnuts on a silicone tray liner or parchment paper. Make a caramel with the sugar and water and pour over the walnuts.

Leave to set.

Prepare a vinaigrette with the oil, walnut vinegar and liqueur, and season with salt and pepper.

Brush the pear slices with a little lemon juice and prepare the salad-on individual
