Heat the oil in a skillet and lightly fry the onion and garlic without letting them brown.
Add the rest of the ingredients (except the water) and leave to cook for a few minutes.
Add enough hot water to dilute the sauce, and bring to a boil.
Throw the mushrooms and vegetables into the skillet and leave to cook for just a few minutes.
