This soup from Dominica is as delightful as it sounds. We tend to use organically grown tomatoes, which are rich in both colour and flavour. In the USA, sweet potato might be called ‘sweet yam’, but sweet yam is a different character in the Caribbean. Try not to get confused!

Ingredients

  • 1 tbsp vegetable oil
  • 1 tbsp butter or margarine

Method

Heat the oil and butter or margarine in a large saucepan. Add the onions and cook until soft Add the rest of the ingredients and then bring to the boil. Allow to simmer for 25 minutes. Cool, Blend the soup in a food processor and return it to saucepan. Re-heat thoroughly. Serve hot. Garnish with slices of tomato, orange and lemon or lime.
