Garnish this one with a dollop of sour cream or yogurt, if you like.
Melt the butter or margarine in a medium saucepan and saute the onion and escallions. Add the water and remaining ingredients. Bring to the boil and then simmer for 30 minutes. Cool and blend in a food processor. Warm again before serving.
