Fritters are made about the size of the average jam-jar top. They are served with or without a spicy sauce or dip. With this basic recipe, you can substitute crab or corned beef for the saltfish.

Ingredients

  • 250 g/8 oz dried salt cod, prepared as above (or tinned bacalao, drained)

Drain the cod and remove all bones and skin. Flake the flesh. Heat the annato or cooking oil in a pan and saute the onion. Set aside. Sieve the flour, baking powder and salt into a large mixing bowl.
