Mussels are not widely eaten in the Caribbean and we don’t claim this recipe as being traditional, but the smoky flavour of the herring and the spices of the Gundy are such a natural complement to the mussels it works as a mysterious ingredient. This recipe, by Chef Charlie Thellusson, has been so well received, we’d like to share it.
