If you are not in the Caribbean you will need to use canned callaloo greens. Another option is spinach, which is fairly similar. This is a side dish and we recommend the tomato sauce as an accompaniment. Or top this dish with grated cheese at the end and brown it under the grill.

Ingredients

  • 50 g/4 tbsp butter or margarine
  • 1 onion, chopped

Method

Preheat the oven to 180°C/350°F/Gas Mark 4. Melt the butter or margarine in a frying-pan and saute the onion, escallions, garlic, thyme, tomatoes and drained callaloo or spinach, salt and pepper, in that order. Stir well and remove from heat. Place half the sweet potato slices in a gre
