‘Rundown’ is the Jamaican name given to the technique of slow-cooking savoury dishes with coconut milk and spices. The most common rundown dish is Dip and Fall Back but this sauce is also used with vegetables. Eggplant, also known as antrober or aubergine, grows in the Caribbean. Most of our eggplant seems to be best appreciated by vegetarians.
