We borrowed this name which we found on a sign in a favourite fried-chicken shop in the rural hill country. It probably was not meant to be humorous! Drumettes are the first joint of the chicken wing. They look like small chicken drumsticks and are ideal for appetizers.
Prepare chicken, wash and dry well. In a bowl, mix all the dry ingredients; coat the chicken pieces with the mixture. Lay on a flat tray and refrigerate for a minimum of 2 hours.
Heat the deep frying oil in a skillet until very hot, add the chicken pieces, in batches, if necessary, and deep fry until cooked (about 8–10 minutes).
