Wash and dry chicken and then cut into cubes. Marinate the chicken for at least 1 hour in the garlic, thyme, salt and pepper, onion and ginger, if using.

Heat the oil in a skillet. Remove the chicken and reserve the seasonings. Saute chicken pieces until browned. Add reserved seasonings and cook for 1 minute. De-glaze the pan with wine, add the coconut rundown sauce and cream, reduce th
