From Guyana, a very quick and simple dish with a deep flavour.


  • 1.5 kg/3 lb chicken, cut into quarters, or boneless chicken breasts
  • 120 ml/


Wash and dry the chicken pieces and place in a bowl. Put the remaining ingredients in a saucepan over moderate heat until sugar has dissolved. Allow to cool, pour over the chicken and marinate for 2 hours or overnight.

Remove chicken and reserve marinade. Brown the chicken in the oil, then reduce the heat and add the marinade and pineapple, if using. Simmer chicken breasts for 20 minute
