Here is the dish that I’d cook for my grandmother if she were to walk through the door, I’d pour some of the stout in the dish and give the rest of the bottle to her to drink as it was a favourite of hers. This is an interesting combination of flavours – sweet, hot and bitter. Caribbean stout is sweeter than Irish, so if you’re using the Irish black stuff, you’ll need to add sugar.
