What a simple dish, but so full of flavour! Serve it with noodles instead of tagliatelle, if you’d prefer.


  • 2 boneless, skinless chicken breasts, cut into 5 cm (2 in) cubes
  • 2 spring onions, green part only, finely chopped

  • Season the chicken with the spring onion, ginger wine, lime juice, salt and pepper. Let it marinate in the fridge, covered, for 45 minutes.
  • Put a large pan of salted water on to boil. Take the chicken out of the marinade (reserve the marinade) and pat dry with kitchen paper.
