Ingredients: sunflower or groundnut oil; zest and juice of ½ lime; salt and pepper; 1 red chilli, deseeded and very finely chopped; 4 salmon steaks, about 175 g (6 oz) each; lime wedges, to serve; 75 g (2¾ oz) butter, slightly softened; Pineapple, Avocado, Orange and Mint Salad with Ginger Dressing, to serve; 1½ tbsp finely chopped fresh coriander; 1 garlic clove, finely chopped

The butter on this is so great that you’ll want to lick it up with bread - or even your tongue! It is one of my favourite creations and I can’t wait for everyone else to try it. It also goes well with Barbecued Lobster. The salmon steaks are also good with Lime, Chilli and Coriander Mayo.
