Try to get clean crab shells from your fishmonger and serve the dish in them for a fantastic effect. This recipe makes an impressive starter, or a light lunch if you add a green salad.

Ingredients

  • 30 g (1 oz) butter
  • 1 tbsp sunflower or groundnut oil</

Method

  1. Heat the butter and oil in a heavy-based saucepan and saute the onion, celery and peppers until soft but not coloured. Add the garlic and cook for a further 2 minutes. Now add the flour and stir it round for a minute or so until it is well incorporated. Take the pan off the heat and add the milk little by little, stirring as you do so.
