  1. Start with the ackee. Heat the oil in a heavy-based saucepan and cook the onion and peppers over a medium heat until soft, stirring often. Add the tomato and cook for 1–2 minutes, stirring occasionally. Stir in the mushrooms and cook for a few minutes more, letting the natural juices come through and evaporate.
