The French-Caribbean phrase, ‘C’est chien’, means, ‘It’s delicious’, and this sauce is hot, wonderful and very simple. Great with fish and barbecue chicken, too.


  • 4 × 300–400 g (10½–14 oz) thick fillet steaks
  • sunflower or groundnut oil salt and pepper


  1. Mix everything for the sauce together and pour over 50ml (2 fl oz) boiling water. Leave to cool and infuse. That’s your sauce!
