Ingredients: 3 tbsp roughly chopped flat-leaf parsley; 2 tbsp mild olive oil; ½ hot red chilli (ideally Scotch bonnet) seeds left in, chopped; sunflower or groundnut oil salt and pepper; juice of 4 limes; 6 spring onions, green part only, finely chopped; 4 × 300–400 g (10½–14 oz) thick fillet steaks; 4 garlic cloves, finely chopped

The French-Caribbean phrase, ‘C’est chien’, means, ‘It’s delicious’, and this sauce is hot, wonderful and very simple. Great with fish and barbecue chicken, too.

Ingredients

4 × 300–400 g (10½–14 oz) thick fillet steaks
sunflower or groundnut oil salt and pepper
