Ingredients

  • 200 g (7 oz) mango honey (or other kind)
  • 4 large free range egg yolks

Method

  • Heat the honey until runny. Find a bowl that will fit over a pan of water. Beat the egg yolks and honey in the bowl and bring the pan of water to a simmer. Bring the cream and milk nearly to the boil in another pan, then pour it over the egg yolks and honey, whisking all the time.
