You can make this in ramekins or shallow brûlée dishes for a stylish pudding. It will make you feel as if you are at the end of a long lunch in the sunshine with a beautiful view of a Caribbean beach and a lazy afternoon ahead.

Ingredients

  • 4–6 tbsp caster sugar
  • 4 large free range egg yolks

Method

  • Preheat the oven to 180°C/350°F/gas mark 4.
