This is ‘cheeky’ food: the fieriness of the fruity hot sauce and the spiced-up plantain go straight to your cheeks! As well as having these on a picnic, they can be heated up as a pudding or as a party dish to feed a crowd.

Ingredients

  • 3 large, very ripe plantain
  • 100 g ( oz) caster sugar, plus

  • Peel the plantain and cut it into chunks. Boil until very tender (at most, this should take 10 minutes).
  • Transfer the plantain to a bowl and add the sugar, nutmeg, vanilla and cinnamon. Mix until smooth. I love this bit – it smells brilliant.
