Ingredients

  • 2 carrots, roughly chopped
  • 2 onions, quartered
  • 2 sticks of celery, roughly chopped<

Method

  1. Put all the ingredients into a large pan and cover with water. Bring to the boil. Turn the heat down to a simmer and cook, uncovered, for 30 minutes adding more water every so often. Strain, cool, cover and refrigerate.
  2. To make the flavour more intense, simply boil to reduce.
