Cut the butter into 4 or 6 pieces and put it into a heavy saucepan over medium heat. Melt the butter, stirring from time to time, then increase the heat to bring the butter to the boil. Let it boil for about 1 minute. Reduce the heat to the lowest point possible, using 2 or 3 asbestos mats if necessary. Cook the butter, without stirring, for 45 minutes, by which time it will be golden and the milk solids in the bottom of the pan will be brown.
