This mixture of ground spices and hot pepper was brought to Trinidad by migrant Hindu workers. When ground dry it is curry powder. When wet, because of the addition of fresh hot peppers or a liquid, it is curry paste. Commercial curry powder may be used, but since massala is easy to make, and all the ingredients readily available, it is worth the extra effort. Massala may be used in any island recipe calling for curry powder.
