Ingredients

  • 2 medium onions, very finely chopped
  • 2 tablespoons finely chopped chives
  • 3 cloves

Method

Mix all ingredients together thoroughly. Rub well into the inside of a suckling pig prepared for roasting.

To season whole cleaned fish, gash two or three times on each side of the backbone, and stuff the seasoning into the incisions. Any fish, or meat, may be seasoned with the mixture. Cook as directed in recipes.
