This is derived from the fresh mango chutneys of the Hindu agricultural workers who migrated to the north of Martinique in the 19th century. It makes an unusual and refreshing appetizer, or an accompaniment to drinks. The mango used in Martinique is usually the mango vert, a rather stringy mango, not considered to be one of the fine dessert mangoes, known as mangue. Other mangoes are used in Martinique, and as our choice of mangoes is not very wide, any type will do so long as it is green,
