This recipe is from the family collection of Charles and Yveline de Lucy de Fossarieu, who have recently restored the De Leyritz Plantation as an inn, at Basse Pointe in the north of Martinique. I was amused when Mme de Fossarieu explained that it was a Northern dish. I realized I was being arrogant. An island of 50-by-19 miles is as entitled to a regional kitchen as anywhere else. The colombos, curries brought in by Indian plantation workers, are also considered Northern dishes, developed
