This snail dish was created in the kitchens of the de Leyritz Plantation in 1755 to celebrate a domestic event connected with the building of a petit chateau bordelais, the main house of the plantation, built near Basse Pointe, in the north of Martinique, by Michel de Leyritz at the beginning of the 18th century.
