  • 1 lb. salt cod
  • 2 dozen ackees or 18 oz. tin ac


Soak the salt cod in cold water. The length of time will depend on the hardness and saltiness of the fish. Drain, and cook in fresh cold water. Simmer until tender, adding the fresh ackees 15 minutes before the fish is done. Drain and set the ackees aside. Remove any bones and skin from the fish, flake and add to the ackees.
