This curry, given me by Mme Yveline de Lucy de Fossarieu of the de Leyritz Plantation, can be made with kid as well as lamb. It is an old family recipe and perfectly illustrates the Hindu influence in the north of Martinique; the wine represents France, and the vegetables represent the Americas. It is this ability to bring together foods and cooking techniques from very widely scattered parts of the world that is the real genius of Caribbean cooking.
