  • lb. cold boiled beef, chopped
  • ½ lb. fresh pineapple, diced
  • 3


In a salad bowl combine the beef, pineapple and orange sections. Mix together the oil, vinegar, mustard, sugar, salt and pepper, whisking to blend well. Pour over the beef and fruit and toss lightly. Garnish with lettuce or watercress.

Roast beef may also be used for this dish. Soup meat is also traditionally used.
