Heat the oil in a heavy, flameproof casserole and add the chicken pieces. Cook over medium heat until they have stiffened and are very lightly golden on both sides, about 5 minutes. They should not brown. Remove and set aside. Add the onion, garlic and mushrooms and sauté until the onion is tender, but not browned. Return the chicken pieces to the casserole. Season to taste with salt and pepper
