  • 2 cups long-grain rice
  • Juice 1 large lime
  • 3 cup


Wash the rice thoroughly. Drain, cover with cold water, add the lime juice and allow to stand for 2 or 3 minutes. Drain. Pour the water into a heavy saucepan with a tight-fitting lid, add the salt, bring to the boil and pour in the rice. Stir, bring back to the boil, cover, lower the heat and cook for 10 minutes.
