Black beans and white rice are a great favourite in Havana, either served separately, or together as Moros y Cristianos (Moors and Christians).
Wash the beans thoroughly, but do not soak them. Put them into a large saucepan with the cold water, cover and simmer gently until they are tender, about 1½ to 2 hours. Add a little hot water from time to time as necessary.
