Wash the rice thoroughly in several waters, drain and allow to dry. In a heavy saucepan with a tight-fitting lid, melt the lard or oil. Add the rice and cook, stirring until the rice has absorbed the fat, taking care not to let the rice brown. Add the salt and boiling water, cover, and cook on the lowest possible heat until the rice is tender and all the liquid absorbed, 20 to 30 minutes.
