  • 3 cucumbers, about 8 inches long

Method

Peel the cucumbers, cut in half lengthwise, scrape out the seeds with a spoon and cut into ½-inch crosswise slices. Drop into boiling salted water and cook for 5 minutes. Drain. Place in a warmed vegetable dish. Melt the butter in a small saucepan. Stir in the flour and cook without letting the flour take on any colour, for a minute or two.
