This is the recipe for rice and red beans as they are cooked by Mme Jean-Noël Villahaut Ces François at her restaurant Aux Raisins Clairs in Guadeloupe. The large red kidney beans may be used, but the smaller type, sometimes called California pink is to be preferred. This very simple form of rice and beans is delicious with either meat or fish.
