Papaya is known as pawpaw in Jamaica.

Ingredients

  • 1 green (unripe) papaya, weighing about 5 lb.
  • 2 tablespoons vegetable oil

Method

Wash the papaya, peel, cut in half lengthwise, and remove and discard the seeds. Drop the papaya halves into boiling, salted water and parboil for 10 minutes. Drain thoroughly and pat dry with paper towels. Heat the vegetable oil in a frying pan and add the onion, garlic and minced beef. Sauté for 15 minutes, stirring from time to time to break up the meat. Add the tomatoes, hot pepper and salt
