Rice is an immense favourite throughout the Caribbean and much ingenuity is shown in dishes that vary from island to island, or, as is the case with Riz au Djon-Djon, within themselves. In its simplest form it can accompany a main dish of fish or meat. A more elaborate version, accompanied by a green salad, can be served for lunch.
