  • 3 fresh hot red peppers, seeded
  • 3 ripe red bell peppers, seeded, or use 4 pimentos

Method

Pound the hot and sweet peppers with the peppercorns, garlic, and salt in a mortar. Transfer to a bowl and beat in the lime juice and oil, or combine the ingredients in an electric blender and reduce to a purée. Serve with suckling pig.
