  • 3 tablespoons vegetable or olive oil
  • 1 medium onion, finely chopped

Method

Heat the oil in a small saucepan and sauté the onion until tender but not browned. Add the tomato, hot pepper, salt and pepper to taste and cook, stirring, for about 5 minutes or until well blended and fairly thick. Stir in the vinegar, mixing thoroughly. Serve with any meat or fish.
