  • 2 hard, green (unripe) mangoes, weighing 1 lb. each
  • 1 teaspoon finely chopped


Peel the mangoes and grate down to the seeds, or cut off the flesh and chop fine. Add the garlic, salt, and hot pepper, mixing thoroughly. Place in clean jar, and top with the oil. Cover tightly and refrigerate until ready to use. This relish will keep for several days, but is essentially meant to be eaten quite soon after it is made.
