This is made with boniatos, the white sweet potato, either the pink or white skinned variety.


  • 1 lb. sweet potatoes, peeled and sliced
  • ¾ lb. sugar

Boil the sweet potatoes in water to cover until tender, about 25 minutes. Drain and mash. In the meantime make a syrup with the sugar, water, lime peel and cinnamon. Boil in a heavy saucepan until it reaches the soft ball stage (250°F on a sugar thermometer). Remove the peel and cinnamon and mix the syrup with the sweet potatoes.
