Dumplings in Antigua are familiarly known as dumplins.

Ingredients

  • ½ lb. plain flour
  • 1 tablespoon baking powder
  • 1 oz.</

Method

Sift the flour, salt and baking powder into a bowl. Rub in the butter with the fingertips until the mixture is crumbly. Add enough cold water to make a fairly stiff dough. Turn out on to a flour board and knead until smooth. Shape into balls about 1 ½ inches in diameter, and flatten. Drop into boiling salted water to cover and cook for about 10 minutes.
