These fried biscuits are an essential part of the traditional Trinidadian dish, Accra (Saltfish Cakes) and Floats.

Pour the water into a small bowl and sprinkle the yeast over it. Let it stand for a few minutes, then stir to dissolve. Set aside in a warm, draught-free place. Sift the flour, salt and sugar together into a bowl. Rub the lard into the flour until the mixture is crumbly. Add the yeast and enough lukewarm water to make a fairly soft dough.
